Recipe of the day: Grilled Pizza

Ingredients
1 - chicken breast- grilled and shredded
1 - 8 oz can of pizza sauce
2 - 8.5 oz pkgs of pizza crust
1 - red pepper- roasted, peeled and diced
1/2 cup sliced black olives
8 oz fresh mozzarella cheese
1/2 cup fresh spinach
olive oil
*this is enough to make 2 pizzas


Directions
Pre-heat grill to 500 degrees. Your grill needs to be smoking hot so the crust won't stick.
While your grill is pre-heating, mix pizza crust as directed on package. Roll out dough as you normally would, but place on cookie sheet and refrigerate for about 5-10 minutes.
Remove dough from refrigerator and smear olive oil on dough- cover with oil completely. 
Place dough oil side down onto grill.
Once the dough starts to bubble and you can easily move the dough around- flip.
MOVING VERY FAST- apply pizza sauce, cheese, chicken, red peppers, black olives and spinach.
Leaving the pizza on the grill only long enough to have the cheese melt and then remove. Cool slightly and slice.
