Recipe of the day: My version of Grandma Jean's Noodle Salad

Ingredients
1 - 12-16 oz box of large shell noodles
1/2 cup of egg free mayo- I use Vegenaise
1 tablespoon of mustard
2 tablespoons of sugar
1-2 tablespoons of milk
1 small tomato- chopped
1 avocado- chopped
2 tablespoons of cilantro or parsley


Directions
Cook noodles as directed on box. Drain and rinse with cold water.
Add mayo, mustard, sugar and milk. Whisk. Dressing should glisten- if it does not- add 1 tablespoon extra milk. set aside.
Place chilled noodles in large bowl. Add dressing to coat. Add tomato, avocado and cilantro/parsley. Chill before serving.
