Recipe of the day: Omelette

Ingredients
2 - large eggs
2 tablespoons milk
1/2 cup fresh spinach
3 tablespoons roasted red and yellow peppers- chopped
1/4 cup sharp cheddar cheese
Olive oil 


Directions
In small pan , heat 1 tablespoon olive oil. Wilt Spinach and roasted peppers. 
Remove from pan. 
In same pan, put 1 tablespoons olive oil. 
Crack eggs in small mixing bowl and whip with milk until frothy.
Pour egg/ milk mixture in pan. 
As the eggs begin to set, very carefully lift the edges of the omelette upwards with a spatula, make sure that the omelette does not stick and also allowing the uncooked eggs to run underneath. Rotate the pan, making sure that all sides have been moved.
Flip.
Apply remaining ingredients to omelette. 
Fold in half and let sit in pan until cheese is melted- make sure omelette doesn't burn.
